

Welcome to BettyJBakes! I am glad you are here! I want to thank you for visiting my blog! This is my first attempt at writing a blog and I must say it has been fun!!! It is also therapeutic to sit and write. I was thinking about Betty Crocker since my Mom had many of her cookbooks and recipes. The orginial Betty Crocker cookbook that my Mom had is literally falling apart and has loose pages.

Was Betty Crocker a real person? If not, how did she come about?? Every time you go down the baking aisle at the supermarket, you see Betty Crocker items everywhere still today. She is vintage, iconic, and never seems to lose any popularity. I love the Betty Crocker name and the products the name makes. From cake mixes to frostings, from icing in a tube to fruit snacks, from cookbooks to Bisquick, the list goes on and on. I can’t imagine the baking world without Betty Crocker in it!
So, who was Betty Crocker???

Betty Crocker is a fictional persona created in 1921 by the Washburn-Crosby Company (later General Mills) to serve as a friendly, trustworthy face for marketing baking products and answering consumer queries. She continues to be an iconic American brand mascot, not a real person, even though she was portrayed by actresses on radio and television.

Do you remember the Betty Crocker Cherry Chip cake mix??? This mix was iconic!

How about Betty Crocker’s Rainbow Chip cake mix and frosting??? This is an all time favorite!
So, think about a Pina Colada cocktail. Let me just say that I love Pina Coladas! What are the elements of the drink? Of course there is coconut cream, pineapple juice, and rum. This cake has all those flavors including the rum flavoring! How fun is that? I love recipes like these when you are in a hurry or may not have a ton of time to bake something from scratch. A recipe using a cake mix as a base and building from it, is a great time saver. When I saw this recipe that my Mom cut out, who knows how many years ago, I knew I had to share it! This screams vintage and classic.

This is a picture of the recipe my Mom cut out. She actually cut it off of a Betty Crocker Cake Mix box. This is part of the fun with the Betty Crocker brand. You would buy a mix and there would be other recipes on the box for you to cut and save, baking tips, recommendations, and all kinds of information. I remember the Bisquick box having all kinds of recipes on the back and sides of the box as well! Every so often, they would change up the recipes displayed other than the classic pancakes, waffles, dumplings, etc.

The Bisquick dumpling recipe was a staple at my house growing up. My Mom would make delicious beef stew with Betty Crocker dumplings which baked right on top of the stew in the pot. They are so delicious!!!! If you wanted pancakes for breakfast, Bisquick was the first thing we went for. There weren’t all the other options for pancakes like there is today. It was and still is an all around baking mix. We used it for so many different things. Biscuits were another favorite food item made only with Bisquick. No ready made dough that you just pop in the oven for us! It was always made with Bisquick, and they were delicious!
Now, on to today’s recipe…. Betty Crocker’s Pina Colada Cake! 
Ingredients:

1 pkg. Betty Crocker SuperMoist Yellow Cake Mix

1 can (8 ounces) crushed pineapple in juice, NOT drained

1/2 cup shredded coconut
-
2 Teaspoons Rum flavoring (or you could use actual Rum!)

1 carton (8 ounces) frozen whipped topping, thawed

Toasted Coconut
Directions:

Heat oven to 350 degrees.

Grease and flour 2 round pans, 8 or 9 x 1 1/2 inches, or a 13 x 9 rectangular pan.

Prepare cake mix as directed on package EXCEPT substitute pineapple for the water.

Toasting coconut takes only minutes, bringing out a nutty flavor and golden color. Stir shredded coconut and rum into the batter. Pour batter into pan(s).

Bake as directed on box. Cool for 10 minutes. Remove from pan(s).

Frost layers or frost rectangular cake with whipped topping. Sprinkle with toasted coconut. ***Toasting coconut takes only a few minutes, bringing out a nutty flavor and golden color. The best methods are in the oven (350°F for 5–10 mins) or on the stovetop (medium-low heat for 3–5 mins). Spread coconut in a thin, even layer and stir frequently, as it browns fast and can burn easily.

Refrigerate until serving time. Store any leftovers in the refrigerator.
