
Easter is quickly approaching! As I think back to Easter when I was a child, I can remember one of my favorite cookies that we made every Easter. As an adult, I still make these cookies! My Dad was 100% Italian and I am proud of my Italian heritage. These cookies are an Italian favorite!

Italian Egg Orange Cookies
Preheat oven to 350 degrees
6 Eggs
1 cup Shortening, melted
1 cup Sugar
4 Tbsp. Baking Powder
2 Tsp. Orange Extract
5 1/4 cups Sifted Flour PLUS 1 Tbsp.
Beat eggs. Add melted shortening, sugar, and extract. In a separate bowl mix flour and baking soda. After combined, add the flour mixture to the egg mixture. Mix together well. Shape dough into small balls and place on cookie sheets.
Bake in 350 degree preheated oven for 15 minutes.
This recipe makes approximately 150 cookies depending on what size you shape the dough balls. You can use a dough scoop to help make your cookies all the same size!
We always frosted these cookies when cooled. I make a simple icing with milk and powdered sugar. I simply put 1 cup of powdered sugar into a small bowl and added milk until the consistency you desire is met. Everyone has different tastes and one person make like the icing thicker than others. Also, you may choose to use food coloring and make your icing orange. This is your choice.

I always add sprinkles of some sort to make them pretty! You can use decorative colored sugar if you wish. I personally like the rainbow sprinkles OR I LOVE IF I CAN FIND SOME SORT OF EASTER OR SPRINGTIME SPRINKLES. Wilton typically make holiday sprinkles or you may even find them at a store like Walmart.
ANOTHER TOPPING OPTION: Some people like to top their cookies with freshly grated orange zest.
